100% tempranillo from the “La Secreta” parcel, a vineyard which is over 60 years old and recognized as a Vino de Pago, which is a classification above the Rioja DOCa. The grapes are harvested by hand during the third week of October. Fermentation is carried out at 25°C for 8 days. Maceration takes place for 3 days after the fermentation has finished. The wine is aged for 12 months in 70% new French oak and new 30% American oak barrels. This makes the wine technically a Crianza.
Intense aromas of cherry jam, black currants, baking spices, cloves and ground pepper, dried underbrush with some floral elements. The palate is medium bodied, with power but with a velvety structure. Acid is soft and tannins and quite ripe and round, more mouth-filling than drying. There is a lovely long toasty finish.
Pair with grilled red meats, game birds or mushroom ragouts. Drink now and over the next 5 years.
